Quality beef ribs slow cooked in an Italian style sweet/sour sauce, made up of celery, onion, carrot, balsamic vinegar, and our fortified wine. Cooked until the meat is falling of the bone, and served with chef’s special paris mash. * G.L

Pork Cassoulet (an Italian twist on the Toulouse classic!)

Estate raised pork, estate raised and made pork sausage, garlic, thyme, bacon, celery, carrot, white wine and home grown borlotti beans, ham hock, pancetta, prosciutto, and duck confit, come together in a white wine and tomato base and marry to become a dish to remember!
